Maysoon al-Nabahin carefully spreads the last bit of cheese onto a warm piece of bread, knowing it’s all her family of eight will have to eat that day. Umm Muhammed, her nickname, fled with her husband and six children from a destroyed home in east Bureij, seeking refuge at a school in Bureij. Now, they reside in a cluster of tents near Al-Aqsa Martyrs Hospital in Deir el-Balah. Umm Muhammed, aged 45, appears older than her years, her face vivid with concern. In their makeshift plastic tent, a small fire burns where she bakes flatbread on a woodfire saj oven. Surrounded by neatly arranged backpacks and a few precious belongings, she creates a space for her family to live during the day.
